Innovative French restaurant Hortensia, combining tradition and modernity

Hortensia uses a variety of techniques based on French cuisine to capture the "blessings" of the season both in Japan and overseas, The restaurant expresses a "fusion of tradition and modern sensibility" through its course menu, which reflects the condensed flavors of French cuisine and Japanese umami.
The basic principle of our cuisine has never changed: " Three Harmonies."
The first is "Colorful Japanese Cuisine" using seasonal ingredients,
The second is "harmony of composition,"
The third is based on the concept of "harmony of taste."
Using French techniques and Japanese ingredients, we create artistic dishes right before your eyes that allow you to experience the "concentration and flavor" of the cuisine with all five senses.
Enjoy the world of exquisite French cuisine created by Chef Koga Tetsuji, with a focus on concentration and flavor.
With 400 years of history, Champagne Penet-Chardonnet is a meticulous and precise Champagne made exclusively from Grand Cru vineyards.

Champagne Penet-Chardonnet has a 400-year history of winemaking in Champagne.
The Pune family purchased their first vineyards in Verzy during the French Revolution. Located on the northeastern edge of the Montagne de Reims, the estate currently owns 6 hectares of vineyards, all Grand Cru, spread across 30 small plots in Verzy and Verzenay.
Today, the winery is run by fifth-generation owner Alexandre Pounet and his wife Martine, who have redefined the style of the winery since taking over in 2009 . Alexandre vinifies all the plots separately and bottles the best ones as single lieux - dits. Although it is a traditional Champagne producing region, it is no exaggeration to say that its wines are made based on Burgundy principles.
In addition, since 2009 , the winery has been using low dosage for all of its cuvées, making it a pioneer in the region in many ways.
Expressive and meticulously crafted, the wines are of unparalleled quality and perfectly represent the unique character of Champagne Penet-Chardonnet.
This time, we welcomed the current owner, Alexandre Pounet, and are releasing the producer's first release, the new cuvée "Ipothesis," which is arriving in Japan for the first time, We will be offering a total of six wines, including two from Coteaux Champenois, allowing you to savor the world of Champagne Penet-Chardonnet.
