California wine maker Deauratus x Jinbocho Gokita Maker's Dinner

Deauratus, a rising winery established in California in 2023, is pleased to announce that its founder and Japanese winemaker, Shunsei Ishikubo, and co-founder, Eric Baugher, will be visiting Japan.

To mark this special occasion, a one-night-only winemaker's dinner will be held on Tuesday, May 26th, at Jimbocho Gokita.

On the day of the event, guests will enjoy a special course menu prepared by Jimbocho Gokita exclusively for this occasion, paired with five varieties of wine crafted by Deauratus.

This will be a unique opportunity to delve into the background of the land, philosophy, and flavors of these wines, with explanations provided by the winemakers themselves.

Jimbocho Gokita

Jimbocho Gokita, featured in the Michelin Guide, is a unique restaurant that fuses French culinary techniques with yakitori.

It offers "Innovative Japanese" cuisine, combining traditional Japanese grilling methods over charcoal and wood fire with the delicate sauce expressions cultivated in French cuisine.

Owner-chef Yuto Gokita is a chef who has honed his skills at renowned restaurants in France and Japan.

He brings a French culinary perspective and structural approach to the familiar dish of yakitori, creating a truly original style.

This special evening will see Jimbocho Gokita and Deauratus wines come together in a calm space embraced by the warmth of wood, centered around a single-piece cherry wood counter.

Deauratus

Deauratus is a truly unique project by two exceptional winemakers who met at Ridge Vineyards, a prestigious winery representing California. 

Eric Baugher joined Ridge Vineyards after studying biochemistry and molecular biology. He played a central role in winemaking for 27 vintages, making him an indispensable figure in the winery's history.

Shunsei Ishikubo began his career as a cellar hand at Nishi Shuzo, a shochu distillery in Kagoshima Prefecture. He later left Nishi Shuzo to study at the University of California, Davis. In 2008, he began working with Eric at Ridge Vineyards, where he was involved in 13 vintages.

The two have crafted numerous wines that are considered among the finest in Ridge's history, receiving perfect 100-point scores multiple times.

In 2023, as the culmination of their long-standing collaboration and experience, they realized their dream of launching their own wine brand, "Deauratus."

At Deauratus, they leverage their accumulated knowledge, traveling throughout California to thoroughly research soil, microclimates, and cultivation methods. As a result, they have successfully sourced only the finest grapes from the best producers. Based on this philosophy, Deauratus specializes in single-vineyard winemaking.

This marks the first time that Mr. Ishikubo and Mr. Baugher will visit Japan as Deauratus.
